Lazika Green Tea
Green tea, which gets its name from its green color when ready to be brewed, Camellia Sinensis Green tea is obtained by hand-picking the freshest top leaves (2.5 leaves) of the tea plant. Unlike black tea, green tea undergoes roasting, rolling, and drying processes to prevent oxidation of the leaves.
Quality of Green Tea
The quality of green tea depends on factors such as leaf harvesting, harvest season, climate, and processing method. These factors increase the proportion of antioxidant compounds such as flavonoids and polyphenols found in green tea. Flavonoids function as antioxidants, which are central to the body's defense system. Polyphenols also constitute the most important group of natural antioxidants. The most important polyphenolic compounds found in tea are catechins. The most important polyphenolic compound in green tea is epigallocatechin gallate (EGCG).
What are antioxidants and what are their functions?
Toxins known as free radicals can form in our bodies. While some of these toxins are removed from the body, others damage cells and cause oxidation. Antioxidants neutralize these free radicals, preventing cell damage. This slows down the aging process and reduces the risk of diseases such as cancer and heart disease.
Characteristics of Lazika Green Tea
Lazika Green Tea is obtained from the early (first) harvest, which is the May tea. Nourished by melting snow, the shoot portion (2.5 leaves) and the freshest top leaves are hand-picked and then undergo only roasting, rolling, and drying processes. This minimal processing preserves the polyphenol structure and keeps Lazika Green Tea's polyphenol and catechin content high.
Turkish Food Codex Standards
According to Turkish Food Codex standards, the polyphenol content is 11%, while in Lazika Green Tea it is 15.2%, and catechin content is 11% (Turkish Food Codex: 7%). The extract content is 44.25% (Turkish Food Codex: 29%). These percentages are important parameters indicating the quality of green tea.
